Created in 1993, at Castelnaudary, Le Tirou Restaurant rapidly became a reference in Aude and Languedoc-Roussillon (listed in the Gault&Millau Guide and in the Michelin Guide). Its quality cuisine, rewarded with the title of Maître Restaurateur, is made of fresh products. Its culinary specialities (such as baked bean casserole, pork cutlets with mushrooms, young guinea fowl in cream sauce, roasted young pigeon, duck breast and confits or foie gras – see the specials), its home-made desserts, its wine cellar and also its warm and friendly restaurant give it a head start.
